Start with smell. Pick a mango that has a sweet mango aroma. Squeeze the mango gently. A ripe mango will give slightly. Calypso have great shelf life and are best when completely ripe, allow fruit to reach full colour with no signs of green for best eating experience.

- If your mangoes are not ripe enough, store them at room temperature and out of the sun for a few days until ripe
- Never store mangoes in plastic bags – mangoes need air!
